How to Bake “Martabak Manis”

This article explain how to bake Sweet Thick Crepes (Martabak Manis).
You may find martabak manis in Indonesia, it also called with Martabak Bandung, Kue Bandung, Martabak Bangka, Kue pinang Bangka, Kue Terang Bulan (Full Moon Cake), Hok Lo Pan and Apam Balik in malaysia. Martabak Manis is different from Indian Murtabak (Martabak Telur/Martabak Tambi). The name mutabbaq (or sometimes mutabbag) in Arabic means “folded”. Both Martabak manis and Martabak Telur is very popular food in Indonesia.
Ingredients:
- Crepe
- 150 gram segitiga biru flour (or all purpose flour).
- 1/2 tsp. instant yeast (fermipan).
- 250 ml water.
- 1/2 tsp. salt.
- 1 eggs.
- 1/2 tsp. baking soda.
- 150 gram granulated sugar.
- 150 gram segitiga biru flour (or all purpose flour).
- FIllings
- Butter (Wysman or orchid).
- Condensed Milk.
- Grated Cheddar Cheese.
- Chocolate Sprinkler.
- Sesame seeds (optional).
- Grated fried nuts (optional).
- Butter (Wysman or orchid).
Directions:
- Pour in the yeast, salt and flour into the water, stir until well mixed and foamed up.
- Set it aside for 2 hours in room temperature.
- Smear butter to pan lightly.
- Heat the thick pan.
- Pour in the eggs and baking soda.
- Stir the mixture again until well mixed.
- Immediately pour the mixture in and let it cook until the surface become yellowish.
- Put in granulated sugar into outer layer.
- Close the pan and let dried up until the outer layer become crispy brown.
- Remove the thick crepe and put on a cutting board.
- Pour butter and condensed milk on the crepes.
- Pour grated cheese, chocolate sprinkler, grated fried nuts, and sesame seeds.
- Cut the crepe in to two then fold.
- Cut the crepe as you like.
